Is the stress of the clutter, debt, and what to make for dinner…again, wreaking havoc on your health, parenting and marriage? Do you wish you had one authentic Catholic friend who understood your struggles? I am so excited you’re here! This podcast will teach you how to create a clutter-free, organized home that practically runs itself, with dinner on the table every night, enough money to stop living paycheck to paycheck and God at the center of it all! Hi, I’m Gina. A Catholic wife, mom and declutter coach. For twenty years, I made sure my home was organized and running efficiently; we ate healthy, homemade dinners, the laundry was done, and the bills were paid on time, yet, I still felt like something was missing. I thought if my home looked like it belonged in a magazine, my family dined on gourmet meals and I stayed out of debt, life would be peaceful and perfect. I finally realized that I was searching for fulfillment and validation from the outside world. Yes, I needed my home to run efficiently, but I felt a nagging in my heart that I was made for more. If I was going to have a full life with the peace that transcends human understanding, I needed to make God the center. I needed to put Him in charge instead of feeling like it was all up to me. I created a plan that fits ME. Simple routines to incorporate faith into my daily tasks. A lifestyle that’s allowing me to prosper into the woman God is calling me to be. And I’m ready to share it with you! If you are tired of waiting for motivation to strike and you are ready to do the work to declutter your home, plan meals your family will actually eat, break free from living paycheck to paycheck, learn to implement routines for a peaceful home that practically runs itself, AND make a new Catholic BFF who wants to share in your joys and struggles, - this podcast is for you! Grab your garden shears because you’re about to prune away the clutter of life so you can prosper into the woman God has called YOU to be! Opening Bible Verse: Ecclesiastes 9:7
We are all feeling the pinch at the grocery store right now. So how can we stretch our budgets and our time between grocery store visits?
That food you have in your house used to be money! So let's use it!
There is money sitting in your pantry, your fridge, your freezer and in the form of leftovers!
In today's episode I share two meal ideas I threw together this week to avoid going to the grocery store while stretching the budget just a little bit more.
Here are the recipes (roughly) that I made:
First Night:
Broiled chicken thighs with salt and pepper
Last bits of frozen veggies
2 Cups of cooked white sticky rice
Heat veggies in large skillet add cold rice and fry with olive oil. Add salt and pepper to taste. Serve chicken over fried rice.
Second Night:
All the random half filled bags and boxes of pasta
1 15oz can of diced tomatoes
5 cloves of garlic, minced
4 Tbls of butter
2 Tbls of olive oil
1/2 jar of Kalamata olives
Leftover meat from chicken thighs, diced
Cook all pasta according to package instructions. In large skillet, heat chicken in oil and butter. Add garlic and brown. Add tomatoes and bring to boil. Add olives at the end. Serve over pasta with a salad!
The other recipe I mentioned was the marinade for the salmon. Here's that recipe:
1/4 cup real maple syrup
1/4 Balsamic Vinegar
2 Tsp of dijon mustard
Salt and Pepper
Whisk all ingredients together and place in a baking dish with salmon. Marinate in fridge for at least half an hour. Save sauce remaining in baking dish to pour over salmon while it cooks.
I cut salmon into serving sizes and place on baking sheet lined with foil and sprayed with cooking spray. Pour extra marinade over salmon and broil for 3 minutes per side or more depending on your preference.
